Gluten-Free Crispy Baked Buffalo Wings

I hear there is a big football game coming up this weekend.  Time to start planning the party food!  If you love the taste of crispy Buffalo chicken wings, but can’t handle the gluten containing coating, I have the recipe for you!  Here’s a healthy bonus too, they are baked in the oven and not deep-fried.

Whether you are planning a menu for a football game or just having a few friends over for some appetizers, a warm plate of Buffalo Wings is the perfect dish to serve.  These delicious, crispy chicken wings are a great gluten-free option. Serve with homemade bleu cheese dressing to wow your guests!

Like in most of my recipes, I use Bob’s Redmill 1 to 1 Gluten-Free Flour.  This flour blend has the texture of traditional flour.  It works in most recipes as a gluten-free substitute (yeast containing recipes, being the exception.) It is also widely available.

Baking powder and cornstarch (or arrowroot powder) are added to the coating mixture to make it lighter and crispier.  The cornstarch also helps brown the coating a little better.

For these wings, I make my own Buffalo sauce.  I have found that there are some really great sauces on the market, but making the Buffalo sauce is much more cost effective.  Besides, I can be sure that the ingredients are clean.

The heat level of the Buffalo sauce is a personal preference.  My family prefers milder wings, but you can add more cayenne pepper to the sauce if you like them spicy.

The Buffalo sauce can be made ahead of time and refrigerated.  Keep in mind that the butter will solidify and will need to be heated and mixed before coating the wings.

I serve my chicken wings on a platter with a cup of bleu cheese dressing, but you could certainly serve them with Ranch dressing, if you prefer.  Celery sticks, served on the side add a little extra freshness and color to the dish.  The coolness of the celery add balance to a plate of Buffalo Chicken Wings.

  • Line a large baking sheet with foil (for easy clean up). Place a baking rack on the baking sheet and spray with cooking spray. Whisk together dry ingredients in a large bowl. Coat the chicken wings thoroughly with the flour mixture. Place coated chicken wings on baking sheet. Refrigerate the chicken wings for at least one hour before baking.
  • Preheat oven to 400 degrees. Remove wings from refrigerator and let warm to room temperature. Bake in preheated oven for 40 minutes. Meanwhile, follow the instructions to make Buffalo sauce.
  • After 40 minutes, remove chicken wings from oven. Increase the oven temperature to 425 degrees. Place chicken wings in a large bowl and cover with sauce. Toss wings in bowl to thoroughly coat the wings. Place the chicken wings back on the baking rack and put them back into the oven for 10 to 15 minutes, until the wings have crisped up.
  • Serve with bleu cheese dressing, celery sticks and additional sauce.
